Turkey Balls

I have two words for you:

Turkey.  Balls.

In case you’re confused, I’m talking about moist, flavorful, versatile MEATBALLS.  I perfected my recipe for these bad boys a few months ago and have been ob-sessed ever since. 

So far, I’ve added a few spice variations in different batches to make curry balls, italian-style balls (that are worthy of marinara sauce), BBQ balls, and Thai balls.  But the possibilities are endless! 

All you need is this base recipe:

TURKEY MEATBALLS

Prep Time: 5 minutes

Cook Time: 30 minutes

Servings: 50 ping pong ball-sized meatballs

Ingredients

  • 2.5 lbs lean ground turkey (I use the bulk packs of 96/4 from SAMS…adjust the recipe accordingly if you’re making a smaller batch)

  • 1/3 cup plain GF bread crumbs

  • 2 whole eggs

  • pinch salt and pepper

Instructions

Preheat oven to 325 degrees.  Mix all ingredients together, being careful not to “overmix” the meat (this will make for tough meatballs).  Using an icecream scoop, portion out 25 “scoops” onto an aluminum foil lined baking sheet sprayed with cooking spray.  Then split each scoop in half and roll into a ball.  Bake for 25 minutes at 325 and then set oven to “broiler” and cook for another 5-7 minutes until meatballs are slightly browned.
