No Bake Chocolate Chip Almond Butter Balls

If you or your family are anything like mine, you love a little sweet bite after a meal. We’re huge fans of my go-to Energy Balls (as well as the other recipes here on my site), but this grain-free, low-sugar version is a nice way to change things up a bit.

They’re also a nice BALANCED bite, thanks to almond butter (healthy fats), hemp hearts (healthy fats, fiber, and protein), and collagen powder (protein). And thanks to the natural sweetness of the dates (and monk-fruit in the chocolate chips), they’re not loaded with sugar. Definitely one to keep on hand for pre-workout or when you just need a little somethin’ somethin’!

NO BAKE CHOCOLATE CHIP ALMOND BUTTER BALLS

Serves: 9

Prep Time: 10 min

Freeze Time: 30 min

Total Time: 40 min

Ingredients

  • 4 pitted dates

  • 4 Tbsp raw almond butter (64g)

  • 1/4 C raw hemp hearts (32g)

  • 1 scoop Ancient Nutrition chocolate multi-collagen (13g)

  • 1 Tbsp Lakanto monk-fruit-sweetened baking chips (14g) (use code FITNCLEAN for 15% off all orders!)

Instructions

Pulse dates in a blender till puréed. Add nut butter + hemp hearts; pulse again till combined. Add 1 Tbsp of water, if needed, to help it form into a ball. Fold in chocolate chips. Roll into 9 balls. Freeze on a parchment paper-lined baking sheet for 20-30 min or until set.  Store in an airtight container for up to 3 weeks.
